When you heat a starchy food – like toast to a high temperature, it produces a chemical called Acrylamide. Acrylamide has been traced to cancer when conducting testing on animals, which is found in potatoes and toast. The same can’t be said for humans as the evidence does not point to Acrylamide causing cancer in people.
Experts feel though, that it has an ability to cause cancer in humans.
The more burnt the toast = the more acrylamide that is present. In the UK , the Food Standard Agency strongly recommends to toast your bread to a lighter golden brown, rather than burning. Same goes for potatoes and root vegetables. Also, boiling, steaming, or using a microwave is not said to cause this reaction.
Keeping your potatoes in the refrigerator increases the levels of acrylamide within them, which is bad. Instead, store them in a cool, dry, dark place.
